THE PERFECT recipe for your cookie craving

In search of a simple healthy cookie recipe that is not unhealthy AT ALL and extremely easy to make, I decided to try these out and they perfectly satisfied my cookie craving.

just 1 banana (ripe is best)
1 cup quick oats

mush banana and mix with quick oats
scoop onto tin foil
bake 15-20 minutes in a 350F oven
EAT

thumb-print cookies

So these cookies aren't exactly healthy but they are much better for you than normal cookies and HONESTLY they taste just as good. I originally wanted to make theses lemon squares from chocolate covered katie but I had some measurement problems so the lemon tasted really weird, but I really liked the crust. The second time around instead of lemon squares I wanted to make mini lemon tarts, I made the same recipe for the crusts (just doubled the ingredients and used half almond flour) but made them into little individual thumbprint cookies. They came out even better as cookies!
I filled these cookies with a lemon curd ( no butter but not healthy ) from a barefoot contessa recipe.
They are so delicious.

These would also just make really good plain cookies. They taste like shortbread with a hint of almond.

Make these cookies and fill them with anything! (lemon curd, chocolate ganache, peanut butter, whipped cream and berries, jam)

makes about 18 cookies:

  • 2/3 cup white flour 
  • 2/3 cup almond flour/ meal (or just another 2/3 cup white flour)
  • 2/3 cup powdered sugar 
  • 1/2 tsp salt
  • 4 tbsp plus 4 tsp coconut oil 
  • 2 tbsp water
Preheat oven to 350 F. Put all ingredients in food processor and blend. 
Press into bottoms of muffin tins or roll pieces of crust into ball, flatten, then pinch up the sides to make little bowls about 1 inch each. Place on parchment paper (about an inch apart) and put in the oven for 10 - 12 minutes or until tops of cookies start to brown. Turn of oven and let cookies cool. 
Then Fill!

Hello again!

Sorry I havent been posting
but one thing you have to understand...
I dont post recipes i havent tried yet so if i havent made anything I cant post anything

but it was recently Halloween and I had a Halloween party.
I wanted to make some desserts that were not super unhealthy and involve tons of butter and sugar so I decided to try a recipe from chocolatecoveredkatie.com
Honestly, I was a little skeptical of using these desserts because nobody at the party wanted "healthy" tasting food but I tried these and WOW
they were more popular than the junky desserts
After a MONTH searching for the perfect Halloween dessert...

                                         Katie's (and now my) go to chocolate cupcakes

My one tip:
put a lot of chocolate chips
so that in every bite you get a gooey piece of  chocolate


This is how I decorated mine.

I also made Katie's Pumpkin Pie Cheesecake dip
(I have to admit I ate about half the recipe before the party)

My little sister thought it needed more sugar (I used powdered sugar) and if you want a sweeter dip as opposed to a cream cheesey dip, so should probably add more powdered sugar too.
Just taste as you go along!


Serve with gingersnaps or graham crackers, but honestly, you can just eat it by itself.

These recipes could also be perfect for Thanksgiving too!

PUMPKIN TIME!

I just found my newest obsession...
Pumpkins!

I was looking online for some cool fall recipes and saw a lot of pumpkin puree, so I got some and it's so yummy and really healthy!
Libby's 100% pure pumpkin has 20% of you daily fiber, 300% of your vitamin A, and only 40 calories!


It's so healthy and adds a special seasonal taste to smoothies, cakes, breads,etc.
I'm making a pumpkin protein smoothie right now as a pre soccer game meal.
